My love affair with bread and butter pudding did not start until I
started working in the UK, where this dish was a big crowd pleaser. The
possibilities of this simple, but delicious dessert fired up my
imagination and it did not take me long to start experimenting with
different flavours, for example citrus or mixed berry – but I really hit
the taste jackpot when I created my chocolate bread and butter pudding.
My secret is a sprinkle of hot chocolate powder in between the slices
of bread. Simple and effective.
Ingredients
- 5 – 6 slices of white bread, buttered
- 2 tbsp sugar
- 1 tbsp marmalade or apricot jam (optional)
- 2 eggs
- 2 cups milk
- 100ml hot chocolate/Milo powder
- 50g Dark Chocolate Pieces
Method
- Grease an ovenproof dish.
- Cut bread and butter into triangles.
- Mix hot chocolate with sugar.
- Arrange the bread and butter, hot
chocolate and sugar in layers in the dish and spread the top layer
with marmalade or apricot jam (optional)
- Place dark chocolate pieces all over the dish spreading evening.
- Beat eggs and milk, then pour this mixture
over the bread and butter and soak for one hour. Bake in a cool
oven (150°C) for up to an hour – until the custard is set and the
top is lightly browned.
