Oxtail Recipe


This time of year we all crave comfort food that fills us from inside and helps us forget the cold weather. With this in mind, then what better way for me to present to you this month’s recipe, a delicious oxtail stew to be served with our house signal gun shiraz. So get those pots on the stove, invite over a few friends and enjoy a wonderful meal with good wine. A perfect winter hide-away

Ingredients


1.5 kg oxtail 
2 large onions, finely chopped
4 cloves garlic, finely chopped
1 green pepper, chopped
3 carrots, diced
10ml Salt
20ml Sugar
300ml red wine
2L water
10g butter
15ml Oil
15g Tomato Paste
15ml Rosemary, finely chopped
350ml jasmine rice

Method


In a saucepan, fry the oxtail until golden brown on either side, set aside. 

 

In a large pot, sauté the oil, butter, onions, garlic, pepper, carrots and rosemary. Once the onions are translucent add the oxtail and then add the red wine and tomato paste, once this mixture comes up to the boil, add the water, salt and sugar. Bring up to the boil. 




 Once at boiling point allow to simmer for 3 hours 


In the mean time, boil the jasmine rice
Serve steaming hot
